The implication is that after 5 days you no longer own the video, and it disappears from your account. Presumably you can buy it again if you want another go.
Or does the video stay associated with your account, allowing you to stream and stuff, but you lose the right to download a personal copy?
It's the former Once the 5 days is up, you no longer have access to the purchase. You will still see it in your purchase history but you won't have streaming or download access to it.

During the 5 days, you're meant to download it, to keep permanently. If for any reason you don't manage to download within the 5 days, you can ask the producer for an extension - but this isn't so it can be streamed, but downloaded.
It's recommended to have either multiple disks and/or an on-line backup service like Backblaze, so a failed hard disk doesn't wipe out your collection. While making copies for other people is piracy, making a backup copy on another disk of your own is fine, and recommended.
Alternatively some stores offer a subscription service where you can stream a lot of content, for a regular monthly fee, similar to how Disney+ or Netflix work.
